Nourishing Add-ins + {Pomegranate Oatmeal Bake}

With only one #ecookbook recipe left to cook, I have started in on the graphic design and "extras" that will be included. What kind of extras? Well, I just put together a 2 page spread detailing my top 6 baking essentials to keep stocked in your pantry --- and I LOVE how it turned out!!! The photography, the descriptions, the fonts... I know, I am a total geek!! I'm just soooooo excited for you to see everything!! And the next 2 page spread I'm working on details my top 6 favorite nourishing add-ins that I like to use in my recipes. I discovered I really do have a sort of cooking "philosophy" that has never been stated: I try to make each and every recipe/dish as healthy as possible by substituting healthier options, yes, but also by adding in nutritious foods that might not be included normally.

Introducing {Pomegranate Oatmeal Bake}:

This recipe that I am sharing with you today is a perfect example of what I'm talking about. It doesn't just include one nourishing add-in, but THREE!! 

  • White Great Northern Beans- a great source of dietary fiber, potassium, and protein!
  • Ground Flaxseed- full of Omega-3 fatty acids, fiber, and antioxidants!
  • Coconut Oil- shown to increase good HDL cholesterol, to fight illnesses, and to help with weight management!

All that nutrition in one breakfast??? Oh yes!!!

I started with a base of this organic pomegranate oatmeal... which is good even on its own (& why it was in my pantry!).

And if the sound of "white beans" scared you at ALL, let me assure you that not one person who devoured this delicious breakfast could tell they were in there!! And I even shared it with another family, not just my own. My friend was so impressed that her toddler requested seconds!  So, all that's left to say is... go on, take a bite!

Pomegranate Oatmeal Bake

Description

Pomegranate Oatmeal Bake w/a hidden ingredient // @noshandnourish

Ingredients

2 Bananas
1 cup Pomegranate Oatmeal ( 3 packets of BetterOats Organic Raw: Pure & Simple Brand)
2⁄3 cups Whole Wheat Pastry Flour (I use Bob's Redmill)
1 teaspoon Baking Powder
2⁄3 cups White Great Northern Beans
2 teaspoons Ground Flax
1⁄3 cup Coconut Oil
1⁄3 cup Vanilla Almond Milk
1⁄2 teaspoon Cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Mash bananas and white beans with a fork in a medium mixing bowl, until fairly smooth.
  3. Combine all other ingredients.
  4. Bake in a 9 x 9 sprayed baking dish for 30 minutes. 
  5. Adorn with additional sprinkles of cinnamon and banana slices (optional)

Yields 6 Servings
