Olympics + {CHOcolate Chip Banana Bread}

I don't know about you, but I just LOVE watching the Olympics.  Every night I find myself promising I'm going to go to bed early earlier, to no avail. I just have to keep watching! It's intriguing. It's inspiring. And I love seeing the smiles on the faces of the champions.  They have trained so hard for that moment, sacrificed so much, and just want to be the best...in the world.  You've probably seen the commercials, but Chobani is sponsoring this year's Olympics!  Talk about big time :)  The forward momentum they have is amazing ... Healthy Living Thirsty Thursday: {Peach Pie Juice}

So as I mentioned in last week's juice recipe round-up post, I am launching a new thing on the blog called "Healthy Living Thirsty Thursday."  No longer is Thirsty Thursday set aside for college males to down as much cheap beer as humanly possible.  No.  It is being redeemed by the healthy living community!  I will share a new juice, smoothie, or cocktail recipe each Thursday from this day forward :) ... Date Night + {Reese's Spinach Smoothie}

I'm not sure what was the biggest highlight of Sunday night: a) actually going on a date night and using our Bonefish giftcard that we'd gotten a YEAR earlier, b) fitting into a dress I haven't worn in literally years, c) eating an entire meal at a restaurant without having to "manage" a toddler or dig into my purse 35 times to find something to occupy/distract said toddler, or d) actually talking to Dear Hubby for 2 hours straight with zero distractions. ... Creating Healthy Meals + {Citrus Confetti Quinoa}

I've discovered I like creating new healthy meals from items on hand rather than following a recipe.  I may draw inspiration from certain recipes or gather ideas for healthy ingredients to have on hand, but I have so much more fun creating (like an artist), mixing, pouring, measuring, and jotting down my notes on index cards.  I bought this aforementioned pack of index cards in college... ... Cherry Limeade - packed with veggies!

Well, it's been ENTIRELY too long since I posted a new juice recipe.  So this weekend it was a must-do! If I got nothing else done, I WOULD: make, document, photograph, and imbibe in some wonderfully refreshing juice.  I still had some leftover cherries (believe it or not!) even after this 5-things-to-do-with leftover cherries post.  Soooooo, I knew cherries would be going inside.  I also had some leftover kale from the "Mostly" Vegan Zuppa Toscana.  And I pretty much ALWAYS ... Homemade Vegetarian Double Decker Tacos

We don't frequent Taco Bell, and as I mentioned in this post, Dear Hubby doesn't really like Mexican food.  But he LOVES their double decker tacos.  Crunchy layered goodness! So when brainstorming my next vegetarian meal attempt, these came to mind.  I saw the MorningStar Farms' Crumbles at Walmart and put them right into the basket.  These would be my base.  I bought a bunch of other veggies that I thought I could easily disguise, like a frozen veggie combo pack of corn, black beans, red peppers, and onions and a bag of fresh broccoli "slaw" ...
