New House! + {Strawberry Kale Smoothie} - HLTT10

So, in case you didn't see on Facebook, we got the new house!!  They accepted our offer and if all goes according to contract, we'll get the keys mid-November. (Yeah, that didn't work out).  I am still amazed at the whole thing.  And by "whole thing" I mean: my life!  I am amazed at how everything is playing out. I finally understand some of the circumstances, though I didn't at the time.  You probably don't know, but before I quit my job back in July, I had been looking for a new job for over a year... to no avail.  Closed door after closed door.  I was the 2nd choice candidate for multiple companies.  I often looked up and muttered: "why, God?!?!?!?!" BUT, if I had gotten one of those jobs, I never would have quit to stay home with Babycakes.  And if I wasn't home with Babycakes, I never would have entertained the idea of moving to the mountains.  And if our house hadn't gone under contract in the first 2 days it was on the market, I never would have been able to get this mountain dream home.

Seriously, in awe.

And my monthly payment will be cheaper.

In awe.

And I'll be raising Babycakes in this outdoor wonderland with room to run and grow and thrive.

In awe.

And I'll only be half an hour away from my inlaws.

In awe.

And we'll be spending our weekends hiking and creating fun memories rather than project after project after project at the short sale house we were thinking about that needed so much work.

Oh, and the doggies like it too :)

To quote Dear Hubby: "I'm not really an overly religious-y sort of fella, but in this case I think God needs credit for orchestrating this. (And our amazing realtor)."

You'll be happy to know that in the midst of all this craziness, I do have a new smoothie to share with you for this week's Healthy Living Thirsty Thursday:


{Strawberry Kale Smoothie}

Incredibly high in protein, iron, vitamin K and calcium, this smoothie delivers a heavy nutritional punch.  It features strawberries, OrganicGirl baby kale, avocado, bananas, Chobani Strawberry Greek Yogurt, and more.

Dear Hubby and Babycakes drank theirs in about 2.8 seconds flat!  Honestly, I was quite surprised.  I can't get either of them to eat avocado, but drink it??! No problem :)

You can use any sort of Kale in this smoothie, but OrganicGirl sent me their new Quick Cook Baby Kale to try.  It comes pre-washed and pre-cut.  And couldn't be any easier!  Throw 2 cups into a smoothie or saute a handful in only 4 minutes at dinner.  I plan on sharing a recipe next week for Kale Chips, as well as a Kale Risotto.  So be sure to check back for those!

Description

Strawberry Kale Smoothie | No Sugar Sweet Life

Ingredients

2 cups Kale (I used OrganicGirl's baby kale)
3⁄4 cups Ice
2 cups Strawberries
1⁄2 Avocado
1⁄2 cup Milk
1⁄2 cup Chobani Greek Yogurt (I used Strawberry)
2 Frozen Bananas
2 Chocolate Belvita Biscuits (optional)
1 tablespoon honey (optional)

Instructions

1. Blend ice and kale first.
2. Then add the remaining ingredients.
3. Blend until smooth.

Yields 3 Servings
