Vegan Buffalo Cauliflower Dip

This Buffalo Cauliflower Dip is the perfect anchor to a fall snack board. It's perfect for entertaining, gameday, and more! And be sure to include your favorite Simple Mills crackers from Safeway!!

If you've followed me for awhile, you know... I love a good snack board.

They're simple to put together, but look fancy! I like to pick a color theme, when possible: like this purple one, this pink one, full on rainbow, and the orange one you'll see today!

To start, I always use my TWOs rule when I assemble my snack boards (kind of like Noah, lol) ---> 2 dips, 2 kinds of crackers, 2 fruits, 2 veggies, 2 nuts --- that way you make sure you have a variety!

Another snack board tip?

Lay out all of your items on a sheetpan before actually adding them to the serving board. I actually learned this sheetpan tip from my #TeamNosh gals, @crowded_kitchen in this post!

I like to group the veggies close to each other, the fruit together, and crackers allllllllllll around. Speaking of crackers, we LOVE these grain-free + vegan ones from Simple Mills!! They make a couple varieties of almond flour crackers (the square ones) as well as sprouted seed crackers, like the Everything ones you see above.

You may not know, but my husband has now gone "mostly vegan." We've always eaten a lot of plant-based meals.... but now I'm having to get more creative in the kitchen to make sure he's well fed! This buffalo dip was loved and devoured by allllllllll --- vegans and carnivores alike! It's hearty because of the white beans and a fabulous texture thanks to the pureed cauliflower. And those cheese shreds pictured below? They're vegan!

So if you're entertaining a big group over the holidays, many with different food restrictions, this dip + board are perfect to make because it's grain-free and vegan. :)

Vegan Buffalo Cauliflower Dip

Description

Vegan Buffalo Cauliflower Dip

Ingredients

1 tablespoon Olive Oil
1 1⁄2 cup roughly chopped cauliflower
3⁄4 cups white beans (rinsed and drained)
1 teaspoon Minced Garlic
1⁄2 tablespoon everything-but-the-bagel spice
2 tablespoons vegan ranch (I love the Follow Your Heart brand)
1 tablespoon buffalo sauce (or ore if you like things spicier)
1 tablespoon vegan yogurt
1 tablespoon white miso
1 cup dairy-free cheddar shreds

Instructions

  1. Preheat the oven to 425 degrees.
  2. In a large skillet over medium heat, saute the cauliflower and white beans in olive oil for approximately 6 minutes, until cauliflower is softened and lightly browned. Sprinkle on everything-but-the-bagel spice.
  3. Meanwhile, in a large mixing bowl, combine the vegan ranch, buffalo sauce, yogurt, and miso. Use a whisk to combine. 
  4. Add in the cooked cauliflower and white beans to the buffalo mixture as well as the dairy-free cheese, then use an immersion stick blender to puree. It doesn't have to be perfectly smooth, just make sure all of the large pieces are blended.
  5. Pour into a small baking dish and bake for 20 minutes. 
  6. Serve with Simple Mill crackers and/or a full snack board.

Yields 8 Servings
